Hi! I am making Xmas dinner for 16 people tomorrow! We have (are) precooking the turkey(s) and my SIL said I should peel my potatoes and leave them in water overnight and tomorrow I can drain the water, add fresh water and boil as usual for mashed potatoes. So I did it, now I am worried if I should have done it! YIKES! Will the potatoes go brown? Are they safe to eat tomorrow? HELP!
 
Sandra, you can actually do the whole dish ahead of time.

Just cover well and refrigerate after you have mashed and put in all your
ingredients.

Tomorrow generously butter your pan, pour some melted butter
bver the top and heat through in the oven.

Not if you can find a cool place to store, just don't leave
in the warm kitchen. They will however
absorb a lot of the water. Make sure you put in some salt
so they can absorb that for flavor. Tomorrow, you should be
okay as you are not adding milk, but sour cream and cream cheese.

If they seem a bit too watery, just put them in a dish
in the oven for about 20 min.
