I just bought a new cookbook 100 Magnificent Muffins & Scones written and published in the UK. The recipes look yummy and I'm dying to try some. Unfortunately they call for unfamiliar ingredients. Does anyone know the US equivalents for the following terms:

golden caster sugar
light muscovado sugar
runny honey
chocolate spread
mixed spice
peppadew
black treacle

Thank you for your help.

golden caster sugar-light brown sugar
light muscovado sugar-ligh brown sugar
runny honey-regular hunny
chocolate spread-nutella
mixed spice-like apple pie spice/all spice
peppadew-never heard of it
black treacle-molasses

Thank you for your help.[/QUOTE]

Thank you, everyone. I think I have most of the ingredients already, just didn't know what they were. I will try one of the recipes this weekend and see how it all works out.

Thank you again.

Pepperdew is the brand name for cooked peppers (bell peppers) in a jar in oil. They're all lovely and soft and really easy just to take out and chop for omlettes etc. I keep the oil after as it has a lovely char-grilled smell and use it for gently frying onions and stuff for sauces.

Golden caster sugar is not quite the same as light brown sugar - it is also called unbleached caster sugar. You can substitute white sugar with only a little loss of flavour. Caster sugar is slightly finer than granulated so often used for cakes and puddings, but I've used granulated in cakes in emergencies and its nice if you want a larger crumb/more open texture.

We have runny honey and set honey (its thick, like a spread, and is what we have on toast etc.) but I don't think other countries have it - my MIL is from Hungary and she says she never saw it there

Mixed spice is usually a mixture of nutmeg and cinamon, with a hint of ginger and cloves. Allspice is actually the dried and ground outer of another spice I think, but would do instead.

And don't forget we have 20 fl oz in a pint, so you're safer to follow metric weights and measures even if you feel more comfortable with imperial(that's what I do for US recipes :rotfl: )

Also our chocolate spread doesn't have nuts in like nutella does :)

Oh yes! Nutella is actually chocolate hazlenut spread - my nephews love it, but I have to keep it away from DH and DS(14) or they eat a whole jar:rotfl2:

Runny Honey is the consistency of maple syrup, and maple syrup may well work but would have a slightly different flavour.

If you only have set honey you can melt it in the microwave and it becomes runny:thumbsup2
