Both of these two places offer great pools and quality furnishings and both have strong followings. But they're quite different.
If you want an upscale luxury hotel with exceptionally nice indoor public areas and lots of adult-appeal, then Gaylord Palms is a gorgeous hotel for you. It has daily housekeeping service, room service and several onsite restaurants. I believe they charge a daily parking fee and/or resort fee. Transportation to the parks is very limited and it costs extra too.
If you want a more family-friendly place with lots of organized activities and family-friendly amenities, then Bonnet Creek would suit you better. They have a pool slide, small floating rivers, kiddie play areas, game rooms and computer access, all included with the stay. The rooms are all condo-suite style (1-4 BRs) with full kitchens, stacked washer-dryers and master suite w/jacuzzi tub and separate shower. 2BRs (w/2 full baths) sleep up to 8 with a sleeper sofa in the LR and 2 full beds in the 2nd bedroom. 3BRs (2 baths) add another king bedded room. 4BRs (4 baths) add another master suite and they are truly luxurious with a huge gourmet kitchen, leather sofas, big screen tv and cushioned balcony furniture. No daily housekeeping unless you pay extra for it. Transportation to the Disney parks is on a somewhat limited schedule but it's included.
If you'll be visiting the Disney parks frequently during your stay and/or if you'll have children/teens in your party, I'd choose Bonnet Creek. All adults and/or you want onsite dining and/or you prefer daily housekeeping, Gaylord Palms may be just right. HTH!
