My Brunch - A Meal of a Lifetime
For those of you who read my DR, I apologize for some repetitiveness here - it is hard to report about a cruise without dedicating posts to food!

Soon, a few more people had a seat in Meridian. And then we were all taken into Remy. We were taken into the wine room first, where we were given a glass of champagne and a little plate of Jamon Iberico to enjoy while the chef told us all about the meal and the sommelier told us about the champagne pairings.
The Jamon was just delicious and melt-in-your-mouth; it paired beautifully with the champagne (wish I could remember what that champagne was - it is not listed on my menu). It was so fun to hear all about the meal and wines we were going to experience.
And then servers appeared to take parties to their tables. I followed Niko to an absolutely perfect seating arrangement for a party of one. It was a little booth with a view of the ocean - not relegated to a sad corner but not out in the middle of the restaurant. I was thrilled! And Niko was amazing. He was aware of my gluten issues, and the chef was prepared. He asked me if there was anything that I wouldnt enjoy, wanted to substitute, etc. I told him that I wanted to eat everything exactly as it was intended by the chef - I really wanted to stretch myself a little here and try things I might not otherwise in order to fully experience what a truly fine dining experience can be like.
My surroundings were amazing! My view:
My table setting - love the little dish of butter, salts to mix in, and check out that unbelievably delicious gluten-free bread with perfect texture and nothing weird about it at all.
I opted to do the champagne pairing, and my first paired champagne was a Taittinger Prestige Cuvee Rose served by the perfectly french sommelier. I got a kick out of her!
This restaurant is beautiful and full of details.

But on with the food! The first course was a Sweetcorn Emulsion. It was the best soup I have ever eaten in my life. Really.
Next up was the Salmon, Caviar. This was a very lightly smoked salmon with exquisite accompaniments.
Next was the Sea Bass, Egg, Thai - perfectly cooked sea bass with crispy skin served over the best scrambled eggs ever created. I could eat this dish every day of my life and be happy.
The next champagne was the Pommery Pop Gold 06. The sommelier had explained during the wine room talk that people want to be able to drink champagne while viewing the Eiffel Tower, but you arent allowed to just walk around with glasses of champagne (one would think that if there was anywhere you could, it would be France!

Next up was Veal Tenderloin, Potato - this came with a different kind of potato (croquettes), but the chef made these tasty little crispy fried potatoes for me to avoid any gluten. Now I have never eaten veal in my life and had no desire to do so. But I was going to eat what was served the way it was intended to be prepared, and so I did. And this was good - I still wouldnt order veal (I just dont care to support how it is created), but I was so glad that I had just gone ahead and not made any substitutions or anything.
The last champagne was served - the Moet & Chandon Ice. This champagne is intended to be served over ice - which seemed very strange! But it was delicious and incredibly refreshing - perfect for a summer day!
And dessert - I cant remember what the standard dessert was, some variation of what I had - but mine was a light hazelnut gelato over a hazelnut cream. It managed to be both light and rich at the same time, and it was not very sweet, so it was perfect for me!
I, of course, received these handmade yummies as well - an elderflower marshmallow and chocolate and lemon lollipops!
What did I think of Remy? Well, up until that day, this was the best meal I had ever had in my life. Hands down.
When I returned to our stateroom, our fantastic host had everything in perfect order.
Yeah, by this point, I was seriously wondering if there was a way that we could just live on the Fantasy!
