We will be staying in the cabins and plan on saving money by eating breakfast in the cabins. Does anyone have any heatry breakfast ideas(other than the typical bacon and eggs) I would like some casserole recipes that I can make up the night before and stick in the oven while everyone is getting ready...Also can someone tell me of the cabins have a casserole baking dish? TIA :thumbsup2
 
1 dozen eggs, 1/2 pint whipping cream, salt & pepper to taste, 1/2 cup white onion, 2 pounds sausage, shredded Mexican velveeta. Butter a 9x13 dish, break the dozen eggs in the dish, lightly breaking the yokes, layer with with the sausage, onion, whipping cream and cheese. This needs to be prepared the night before, leave in the fridge overnight, bake the next morning at 350 degrees, until bubbly on top, I do about 45-50 minutes, let sit awhile before cutting.
 

We like this English Muffin casserole when were camping. I like it because its easy to make the night before. There's no precooking involved.

12-18 eggs, 6 English muffins, 12 slices of Canadian bacon, 1 cup sour cream, 2 cups cheddar cheese, 2 cups of milk, 1 tbsp Dijon mustard, couple splashes of hot sauce, salt and pepper.

Mix the eggs, sour cream, half the cheese, milk, Dijon mustard, salt and pepper, and the hot sauce (optional) in a mixing bowl until well blended.

Cut the English muffins in half and the Canadian bacon in half. In a casserole dish arrange them round side up alternating between the bacon and the muffins so they look like shingles. pour the egg mixture over the top and sprinkle the rest of the cheese over the top. Cover with plastic wrap for at least an hour, I like to make it the night before and let it sit in the fridge.

Bake at 350 for an hour to an hour and a half. depends on how many eggs you put in. Or until the eggs are set. Cover with foil if it starts to brown too fast.

The Dijon mustard and the sour cream work really well with the eggs. And the hot sauce adds a lot of flavor. Also reheats well in the microwave. We get at least two breakfasts out of one casserole with the four of us. And it works great in a Dutch Oven
 
I don't have a recipe for you, but I can tell you that there is a glass 13 x 9 baking dish provided in the cabins.

OMG!!! Thanks soooo much for those yummy recipes...since they are casserole I will prob use almost everyone of those ;)
 
breakfast goulash,,,all in one big fry pan

oil pan

dice up potatoes, 1 or 2 per person

dice 1 onion

fry until 1/2 cooked

add one pound per 3 or 4 people of either ground sausage or link sausage cut into 3 pieces each, fry until cooked

scrambled 2 or 3 eggs per per person add to pan fry until done

if you like country gravy and/or cheese you can also top it with them
