ok i need some help with low fat healthy meals for my ds8 who is in a wheelchair. he has put on quite a bit of weight this last year and i need to nip it in the bud now before he gets any heavier. i've started with the basics i.e fizzy drinks to diet drinks, changed his yoghurts, didnt realise just how much sugar is in kids yoghurts, cut biscuits down and changed them to plain ones, i feel i need some help with main meals, i tend to do lots of shephards pies, lasagne,etc prob way too much stodgey food. he loves pasta dishes but i only tend to do macaroni cheese(stodge again).:scared1: i need some everyday healthy meal ideas that i could make him for his tea. any different salad ideas would be good too!! btw its gonna be good for all the family:thumbsup2
 
I marinade some diced chicken then cook it and at the end add some sliced pepper,sweetcorn and peas i then place it on top of some boiled rice.
It's filling and what's better is it does not take long to cook.
 
For a healthy dessert or snack, I cut up some fresh fruit and pour Marks and Spencer count on us Vanilla Youghurt on top, it is low in fat, and really really tasty, just like melted Ice Cream.:goodvibes
 
Salad on a tortillia wrap with some tikka chicken pieces and a drizzle of chilli sauce thats what I have just made me and DH for tea and it usually fills him up nicely:)
 

Low fat chicken tonight with quorn pieces and mushrooms with vegis and rice, mmmm also chuck the spreads and just use low cal salad cream, this is so important, esp if like me you are/were heavy handed with it, we just dont have butter/low fat(yeah right) spreads.
I love the rosemary conley recipes. Also go to charity shops and get low fat/vegi cook books I love going through them for ideas.
 
does he eat fish at all? that sreally healthy. otherwise home made pizzas are good with loads of veg and a low carb base

thats what im worried about, my sons 8 and i worried about him putting on lots of weight. im hoping he doesnt put on much between now and may when we go to florida, he's just about ok to carry for short periods of time.
just out of interest how much does he weigh?

quorns a great product as its low fat and the do many different products.
youre doing well by making lots of good choices.
muller light yogurts are the best, and they do lots of floavours.
slimming world do lots of low fat recipes that are great for everyone.
you can easily search for their recipes online.
my son is also a pasta junkie, his diet at the moment is dreadful! i know my fault as i feed him but he's so fussy at the moment and has stopped liking lots of fruit and veg he used to like.
i usually cheat and make spaghetti bolognese and add loads of veg in it.

As somebody has already mentioned, Quorn is really low in fat- And the Quorn pieces you can buy in the supermarket make an excellent stir fry!

One of our favourites is tagliatelle pasta with chilli and garlic. Dice some garlic and chilli (You can keep the chilli to a minimum, or use some sweet red pepper instead!) add it to some chicken, Quorn Pieces, or prawns, and cook it in a good slug of olive oil. Then mix this with the cooked pasta.

Chicken Salad is always a good low fat option- Especially if you cook the chicken in some honey mustard (I use a tablespoon of wholegrain Mustard, a teaspoon of normal mustard, a good squeeze of honey, salt and pepper, and a tiny squeeze of lime juice....)... This is really nice and simple and goes really well with salad leaves.... Sprinkle a few almonds on top instead of croutons (They are much lower in fat than things like cashews too!)....

I would first read a book on nutrition so you can get an idea of the right types of foods and ones to eat in moderation. It is the moderation bit that is the key. Cutting out fatty snacks likes crisps, biscuits, cakes, etc is a good step plus fizzy drinks. I would swap the fizzy drinks for healthy smoothies made with whole fruits not concentrated ones.

Then I would buy a low fat recipe book, look through it and see if the photos look yummy first because if you find a photo appealing more than likely you will enjoy eating it. I would then just start at the beginning of the book and go through trying all the recipes I fancied.

This way you will still enjoy your cooking, your food will become more varied and you will both find things you like that you may not have even tried before. I would also get your son to join you in the kitchen and help prepare the meals.

I just bought a large nicer dicer from JML (official stand, watch out for fakes) and it makes chopping/dicing fruit/vegetables so much easier. My sons enjoy using it and salads, etc are a lot more manageable. Plus you can 'hid' vegs in meals quite easily as the lumps are quite small.

What I have found is when my sons help with the prep/cooking they enjoy eating the food so much more. The key here is to make a change in the style of cooking and keep stodgy foods in moderation. No need to ban anything really as every once in a while it will be fine. Also have a look at the nutrition facts on food labelling, I have often been shocked by the amount of calories in some innocent looking food.

The other thing to think about is exercise for your son, I know he is in a wheelchair, but is there something he could do to help keep him fit?
 
I'm lucky that my girls love their food and most of it is quite healthy, they have treats but I limit them.
I enjoy cooking and all meals are cooked from scratch, most are traditional (roasts, cottage pie, spag bol etc) but I also find fish easy to cook and the girls like salmon, fresh tuna and sole served simply with new potatos and green veg. As for their drinks they have watered down fresh (good quality not concentrated) juices. Be careful with smoothies, a recent report on the f-word said if you added a [commercial] smoothie to your diet every day for a year you could put on half a stone:scared1:
I think keeping creamy sauces to a minimum is important. Tomato based sauces are better and a fresh one is so easy to make and works well with chicken breast and rice too. I make ratatouile (sp) which is nice over pasta or rice and also with grilled steak. Invest in an oil spray and roast vegtables using min amount of oil by using this. Lean grilled chicken kebabs are nice and children enjoy the novelty of eating in this way too.
Try to cut out bread if you can, or switch to wraps and pitta. My DH only likes white so we have brown all week whilst he's at work and we have white at the weekend. (DD2 recently made sandwiches at pre-school and chose the brown bread instead of white - how proud was I!)
Cous cous is nice with the roasted veg too - and so quick!
For biscuits and sweet treats I always have Garibaldi biscuits in the cupboard and microwaveable popcorn is a sweet alernative to chocolate and biscuits and is better on the calorie front - and adds fibre to the diet too:thumbsup2

I had to change my diet whilst pregnant and it was a struggle as I have such a sweet tooth! I found the frozen low fat sausages at tesco were quite good, and replaced sweet snacks with green granny smith apples - their sharpness seemed to satisfy my sweet cravings! And the Jamie Oliver recipies from sainsbury are quite good, we had pasta with low fat bacon, peppers, onion,and creme fraiche mixed together with a sprinkle of low fat cheese on top last night from one of his recipie cards. When shopping now I keep an eye out for low fat, low sugar alternatives! Good luck!

Just a thought. Remember and check the labeling. Many low fat items are loaded with sugar/salt to compensate for the taste :eek:
