Where's the best quick service place to grab a healthy lunch at Animal Kingdom and Magic Kingom?
 
Tusker House at AK- The roast chicken and the salmon are both wonderful.
 
It depends on when you're going; they're shutting Tusker House down, and, if you go when it's closed, the answer is "nowhere" for the AK. For the MK, I know that the Plaza Restaurant does a nice big salad. I'm not a huge salad fan. For that reason, we don't eat at the MK; the options are too limited for us. We just hop the monorail to Epcot - the Sunshine Seasons Food Fair has decent, semi-healthy counter service food.

You can get a roasted chicken (or at least you used to) at Cosmic Rays in MK. Other than that, they are a little limited in options for healthy at that park.
 
At Columbia Harbor house they have a brocoli slaw sandwich, it is awesome. Messy but awesome!
 
I'll second (or third) Columbia Harbour House at MK. They have a great tuna on multigrain bread, a delicious hummus and brocolli slaw on multigrain, and a great salad with chicken, pineapple, feta mentioned above. Very yummy. Plaza is also nice for sandwiches and salads (it is TS).
