I'm sure it is frustrating not to do it your way and to stick together as a group and not have plans. However, sounds like this is a present from grandma for everyone to do a mini vacation to disney together every year. It's not about doing "Disney" but rather just being together and creating memories and having family time. I would accept it as such, realize that these days with her are numbered (or anyones for that matter) and enjoy the family time and make that trip different and special!
We take our kids camping and are very active with hiking, swimming, boating, etc during those weeks. However, there are times the inlaws come along or my parents--those weeks are more sit around the fire and talk and not do as much. The kids understand the difference between the two trips and that each is unique and fun in its own way.
