Having ADR doubts...

My fiancee and I are coming down to the world in late Feb/early March for a brief cruise on the Dream (Squee!!) and a few days after to stay in WDW. We are getting married this year and will be turning our minds to buying a house and taking a late honeymoon in Japan sometimes next year so... I don't know when we will be going back! I want to pick the best of the places I haven't been before and am going to hardly any I've gone to but is there one that I'm missing or should overlook in your esteemed opinions? We are paying out of pocket with a TiW card if that helps! Here is what I have!

Arrival day - skipping a breakfast and doing Le Cellier for lunch or dinner, then the 27th-3rd we will be on the cruise. We are doing the Illuminations dessert party with a group too, so would a 6pm dinner reservation be too close to that?

Thurs: Hoop de Doo for dinner (Fiance's B-day choice!)
Fri: B-fast @Kona, dinner @ Via Napoli
Sat: Dinner @ Flying Fish Cafe
Sun: B-fast @ Tusker House, dinner @ California Grill
Mon: Universal day - late dinner scheduled for Boma (should I swap this for Jiko or Sanaa after they upped the price to $40 a head? I wasn't counting on that!!)
