I think I am going to make one for Christmas...my dad will complain I'm not making something ITALIAN I'm sure, but it seems easy and yummy. Found a recipe that sounds wonderful from Paula Deen with a bourbon sauce. Any tips?
 
I'm not a beef eater but I've made it for other people. I just season with salt and pepper. The 1 tip I can offer is to fold the 2 ends under and tie the beef so that it's all the same circumference and cooks evenly. Also use a meat thermometer.
 
Years ago mom always made it for special occasions. She just chopped up garlic and melted real butter, made a few slits in the beef, pured the mix on top and baked it. It melted in your mouth. I am a vegetarian now, but I still remember it was very yummy. Of course she also seasoned it with salt and pepper.

We use Paula's recipe for our beef tenderloin every year for Chrismas and it is wonderful! Also I agree with CEDmom about tying the ends so that it cooks evenly. We always cook ours on the grills and it seems to be much juicier and tastes better than when we do it in the oven.

You could serve Angel Hair pasta with butter and parmesan as a side to please your dad!
 
I made a tenderloin last year for Xmas Eve...do not remember how (temps. etc) but I rubbed it with olive oil, salt, pepper and alot of garlic...yum! I served beef broth on the side...like au jus...

I also served a first course of manicotti...can you do something like that to please your Dad?

Edited to add: I folded mine too...you do this to make the roast a uniform size...the butcher can do it for you or the meat dept at the store...I also used sliced onions on the bottom of the pan to create a "rack".
 
I've made one for Christmas every year for as long as I can remember. I put some garlic and herb olive oil over it to keep it super moist and give it a little umph, stick a meat thermometer in it, and stick it in the over on roast/bake for as long as it takes until it's cooked to rare--we like it medium rare, and it will continue cooking for a bit even after you take it out of the oven.

We just made one for Thanksgiving....first year-no turkey!! It was really good. We made it in the "set it and forget it" Ronco thing. Also wrapped it in bacon....
 
I used a Barefoot Contessa recipe, and it came out wonderful. SHe also has a recipe for a Gorgonzola sauce to go with it that is also very good, and very easy. I will see if I can find it...
 
Anyone care to share these recipes? I've done pork tenderloin the past 6 years for Christmas dinner, but the beef sounds yummy. It would be nice to switch it up a bit. I always cut the pork tenderloin up, some would get a slice of onion atop and some wouldn't...then I salt them with seasoning salt, and wrap bacon around them. I personally don't eat pork, but it is a dinner my mom used to make for my dad and I know he loves it. I always put a turkey breast in the slow cooker for me and the kids...I think with beef I wouldn't have to do the turkey............................
