I am not the best cook in the world, but I have a small 4lb chicken that I'd like to cook for dinner tonight. Any ideas? Bake it, boil it, fry it? Do I put spices on it and throw it in the oven? I'm looking for something simple! I do have some potatoes, and a huge spice collection. I need some suggestions, because I've been staring at it for 20 minutes now and I can't think of what to do with the darn thing!! :teeth:

I don't think you have time to slow roast it.......very easy and tastes wonderful, so tender it falls off the bone!
All you do is season it with your favorite spices and put it in the oven on 275 for 3-4 hours turning the heat up to 350 in the last 1/2 hour or so.

Well, I would take it to a nice seafood restaurant and then possibly, dancing and drinks? :rotfl2: :rotfl2:

Hee hee hee! :rotfl:

I looked at the time and wondered if you live in California!

You could baste it with butter, thyme, sage and maybe garlic powder. Oven at 325 for an hour or two.

Put it in a roasting pan with your potatoes, and maybe some onions an carrots if you have them. Baste the chicken with butter, rosemary, and thyme, roast it for a about an hour and a half at 400 degrees.

That is what I do, and then the next day I take all the leftover chicken and vegetables and use them to make chicken soup with some chicken broth and egg noodles.

Not enough time here, but I put a whole chicken in a crockpot with carrots, onions and celery and a bunch of Italian seasoning a 2 cups water and let it cook for 8-10 hours. I then serve it over mashed potatoes or rice. I always have enough chicken left over for another meal in the week.

Definitely roast it - simple and delicious. We made two 4lb chickens today but we have the Showtime Rotisserie - Set it and forget it, lol. My hubby bought it about 3 yrs ago and I ragged on him big time for buying from an infomercial but it does a great job with chickens and pork roasts!! I also served mashed potatoes, green beans and breadsticks.

Oh I would roast it, or I would make it in my Ronco Rotisserie set it and forget it! Thing of all the left over's. Chicken sandwich, chicken casserole, chicken salad. chicken soup! So much you can do with one chicken! ;)

Rub spices on the inside and out and stick it on 1/2 empty can of soda or beer. Move the legs out like a little tripod. Put it in the oven or bbq. I think it takes about an hour to cook. It comes out very tender.

Well its probably to late even for California but this is what I do.

2 tablespoons of melted butter
3-4 tablespoons of lemon juice
1 teaspoon of dried basil
1 teaspoon of dried oregano

Pre heat oven to 375 degrees; mix above ingredients; place chicken in square pyrex dish; pour mixture over chicken; cook for 1 1/2 hours basting every 30 minutes.

Use the drippings to pour over the chicken. I usually cook rice pilaf with it and drizzle the sauce over the rice too.

I use the leftovers for chicken salad.

This is what I'm doing, thanks for all of your advice! We actually have the Showtime rotisserie, but my dh always uses it. After spending about 15 minutes trying to figure out how to work it, I decided to throw it in the oven! It looked good going in, hopefully it's edible!
