For a first timer to wdw-
Would the seating area outside the plaza be a good viewing spot?

If not; where would you recommend?

No but any where infront of the castle would be better. @Robo has great map

Anywhere in the hub is the best spot to be. I would highly recommend the plaza garden dessert party which gives you access to a reserved area, especially if you have little kids who won't be able to see past an adult standing in front of them.

We will be 4 adults; one in a wheelchair
One 4 foot & a bit!
2 big Gaston’s!!

I don’t like desserts (shock/horror!) therefore it's not really an option for the party.

Perhaps we could all view from a disabled viewing point?

Well since you have a wheelchair user use the handicap area to view the fireworks from
