Ground Turkey???

We use TURKEY for everything too.
Michael Thurmond, Makeover AMERICA got us HOOKED!

I make them in stuffed peppers (cooked turkey meat mixed with Jasmine rice, some chili mix, placed in oven and baked and topped with low fat low moisture cheese sometimes) (EVERY week make a batch, my DH survives on these without the cheese and has lost quite a bit of weight.

meatloaf (1 lb turkey, raw oatmeal (2 C), "fake" eggs ( I just eyeball it, sorry), LOTS of spice;(we use Mrs DASH, no salt and EXCELLENT flavor, especially extra spicy), garlic, some chopped peppers and onions and a small can of "chopped type" tomatoes on top about 20 minutes in, baked in oven.) 350, hour.

Turkey burgers (buy them preformed, 100% LEAN turkey) OR
1 lb turkey, 1 stalk celery, 1/2 onion, 1 golden del apple, pepper and dash poultry seasoning. Use non stick and grill.

Store bought turkey meatballs, forgot brand as we buy them infrequently (son like them but too high in salt), just don't make'em, never thought too.

For TACO's lb turkey, 1 t each cumin, onion powder, garlic, chili powder, and paprika THEN 2t cayenne, black pepper to taste, 1/2 onion and 1 C water, 1 can of green chili's if you like "heat"
Cook turkey meat, add spices, let simmer about 10-15 minutes.

Turkey bacon, I know, BACON, but sometimes ya JUST gotta have it!

We started using SPICES we never used before, cunim, tumeric, coriander, etc. There's LOTS of flavors out there, I say be adventurous and ENJOY yummy TURKEY food!
 
basicaly I have substituted every ground meat dish I make with ground turkey. I don't even notice a difference. I really enjoy it
 
Oprah's Favorite Turkey Burgers

INGREDIENTS
1/4 cup scallions, thinly sliced
1/2 cup celery, finely chopped
3 Granny Smith apples, peeled and diced
1/8 cup canola oil
4 pounds ground turkey breast
2 Tbsp. salt
1 Tbsp. black pepper
2 tsp. chipotle Tabasco™
1 lemon, juice and grated zest
1/2 bunch parsley, finely chopped
1/4 cup Major Grey's Chutney, pureed

Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.

Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.

Serve with a side of Mar-a-Lago Pear Chutney and your favorite toasted bread, pita or hamburger roll.
 

I make turkey burgers for my family and they love them!

I use the ground turkey (love butter ball, hate the chubs), egg substitute, a package of onion soup mix (which you can delete if you are watching salt -- but if you delete it, add fresh onion and some Mrs. Dash seasoning and ground pepper), and then I "wrap" the turkey burgers in a strip of turkey bacon and put it on the grill.

For meatballs, I used ground turkey, egg substitute, parsley, garlic, italian herbs, and freshly grated parmesan cheese (which is a low fat cheese and is OK per my dad's nutritionist...but check with your doctor to see if it is "legal" for you). You need to add more seasoning that you normally would since turkey is bland.

I'm going to try these two recipes out on dh. I would have never thought to do any of that to flavor up a turkey burger. Thanks for posting :worship:
 
I use ground turkey to make spaghetti, tacos, meatloaf, turkey burgers, etc. As other's have written, pretty much anything that uses ground beef can be made with ground turkey. I don't use anything with less fat than the 85% lean stuff. Anything leaner than tends to dry out too much for my tastes. I've cooked it in non-stick fry pans and stainless steel fry pans and never had an issue with sticking. If you're concerned about sticking, I'd swirl a little olive oil into a hot pan before adding the ground turkey.
 
I, too, use a lot of ground turkey. I've found that I prefer ground turkey breast for almost any dish, including turkey burgers. The taste is different. It's a little less strong, I guess? Don't know know if I am describing it well or not.
I add ingredients to make it more moist (like others on this thread have suggested). I don't miss ground beef and that surprised me because I've been eating ground beef all my life. Turns out I like ground turkey just as much.

WOW, this looks YUMMY, but 4 pounds of meat, they are HUGE burgers and ground fresh turkey can be expensive unless its on sale. I'd like to try it, so I am going to 1/2 it, hope it works!
 
I never buy ground beef anymore. I use ground turkey in any recipe I used beef and just season it more. My DH also has high cholesterol and so I add whole grains anywhere I can in order to help, for instance oatmeal instead of bread crumbs in meatloaf. I use bulgar wheat as a filler as well.

We use soy cheese in place of the real deal and no one here knows the difference anymore.
