Ground beef recipes....cheap and easy???

Here's a couple of my favorites ... both are Atkins Induction friendly.

MAKE ME STUFFED PEPPERS
2 large green peppers, halved lengthwise, 6 ounces each
1 pound ground beef
1/4 cup onion, chopped, 1 1/4 ounces
1 clove garlic, minced
1/2 cup tomato, chopped, about 2 ounces
Salt and pepper, to taste
4 ounces cheddar cheese, shredded
2 ounces cheddar cheese, shredded, for topping


In a large pot, bring about half potful of water to boil. Add the peppers and boil for 3 minutes. Drain. In same pot, brown the hamburger, onion and garlic. Drain fat and stir in tomatoes and seasonings. Cook until tomatoes are hot; remove from heat and stir in the 4 ounces cheese. Put the pepper halves in a greased 8x8" baking pan and fill with meat mixture. Sprinkle the extra cheese on top, if using. Bake at 350º for 20-25 minutes.

Makes 4 servings
Can be frozen


Per Serving: 388 Calories; 27g Fat; 30g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs


MEXICAN SPINACH & HAMBURGER CASSEROLE
1 pound ground beef
1/2 medium onion, chopped, 2 ounces
10 ounce package frozen chopped spinach, thawed and well-drained
8 ounce cream cheese, softened
1/3 cup sour cream
2 teaspoons Seasoning for Tacos
10 ounce can Ro-tel tomatoes, drained (diced tomatoes with green chiles)
1/4 cup canned sliced pickled jalapeños
Salt and pepper, to taste


Brown the hamburger and onion; drain fat. Put in a greased 2 1/2-quart casserole along with all remaining ingredients. Mix well and bake at 350º for about 40 minutes or until bubbly and browned on top.

Makes 6-8 servings
Can be frozen

I make some particular indian dishes with ground beef.
 
Easy Stroganoff

1 lb hamb. (browned and drained)
1 pkg Lipton Noodle side dishes-beef flavor cooked to pkg directions
1 can mushrooms (opt)
8 oz. sour cream

go to Kraftfoods.com and search recipe connection-you can choose what kind of food you are looking for. You'll find tons of good stuff to make!
 
Hamburger Soup.

Cook ground beef, and drain the fat. (or ground turkey)
Add 1 small can low sodium beef broth.
1 large can diced tomatoes.
1 large can mixed vegetables (drained)
some diced celery, some diced onion, if your family likes them.
any other veggies you want. Bring to boil, then simmer.

This is one that's even better the second day. :)

shephard's pie

ground beef
flour
1 can beef broth (low sodium and fat free)
kicthen bouquet (for color to the gravy)
frozen peas and carrots
diced onion
chopped garlic
pre-made mashed potatoes
shredded cheese

brown ground beef, garlic and onions until done. Do not drain.
spinkle flour in pan - the grease and flour will make a roux for the gravy
mix in the flour
add one can of beef broth, stir to mix and add bag of peas and carrots.
simmer, season with salt and pepper, I also add kitchen bouquet for nice color and some Tabasco - smoked chipolte.

after 20 min or so - transfer to casserole dish sprayed with Pam.

combine mashed potatoes with cheese (I usually use some type of cheddar)
placed mashed potatoes on top of ground beef/veg/gravy mixture.

Bake at 350 degrees for about 20 min or so.

very easy - and this can also be made ahead - just add the mashed potatoes before baking and the bake time increases when pulling from refrig to oven.
 
Um, I wanna know what the OP meant by "tater tot casserole"! :goodvibes My daughter and I would live on tater tots if we could! :blush:
 
Here is a quick one that we like to make quite often:

Taco Bake
1 lb ground beef
Minced onion
1 envelope of Taco Seasoning
¾ cup of water
1 15oz can of tomato sauce
1 box medium pasta shells, cooked and drained
2 cups cheese

Cook ground beef and onion. Add tomato sauce, water, and taco seasoning mix. Bring to a boil and then cover and simmer for 20 minutes. Add pasta and 1 cup of cheese to meat mixture. Sprinkle remaining cheese on top. Bake at 350 degrees for 30 minutes.
 
Heres a ground beef twist on a philly cheese steak sandwich.

Brown 1lb of ground beef
Saute one onion, green pepper and red pepper
mix it all up and add creamy italian dressing
spoon over a loaf of french or italian bread cut in half
top with slices of provolone cheese and broil.

Everyone loves it here, I just have to make half of it with out the onions and peppers or the kids have a fit.
 
Quick and Easy Vegetable Soup

1 lb. Ground Beef
1 can Tomato Soup
1 lg. can Crushed Tomatos
1 sm. can Tomato Sauce
1 packet (Lipton's) French Onion Soup Mix
2 cups Water
2 tbs. Sugar
1 package frozen Mixed Vegetables

Brown ground beef in soup pot. Add tomato soup, crushed tomatos, onion soup mix, water and sugar. Bring to a boil. Add frozen vegetable. Simmer until vegetables are cooked through (about 20 minutes).
 
American Chop Suey

Sautee onions and fresh garlic in a little olive oil in a skillet until the onions turn clear.

Then sautee 1½ pounds Ground beef in the same skillet and drain off the fat.
Add a can of mushroom and quart of pasta sauce and simmer.

Cook elbows or any pasta according to directions.
Our favorites are bow ties and rotelli
Drain the pasta, add the meat mixture and stir. Add grated cheese if desired.

Serve with Italian bread and a salad.


Beef casserole

Sautee onions and fresh garlic in a little olive oil in a skillet until the onions turn clear.

Then sautee 1½ pounds Ground beef in the same skillet and drain off the fat.
Add a can of mushroom and jar of brown gravy and simmer.

Cook egg noodles (any thickness and/or shape) as directed and drain.
Mix everything together in a casserole dish. Add shredded Monteray Jack or mozzarella cheese to the top and bake at 375 until the cheese bubbles.

Ok, I just took the ground beef out of the freezer.. :thumbsup2 Now, which to try....... that is the question.. :cheer2:
 
Ground beef
Frozen corn or canned corn drained
Canned string beans drained
Canned diced tomates -- not drained


Brown beef, stir in the rest and cook for 5 more minutes and it's done -- All of my kids love this meal and it's mindlessly easy to prepared.


Serve with rice, potatoes, noodles, bread -- whatever.
 
You can tell who is from the North on this thread. Only us Yankees call it "American Chop Suey" ;) Where the heck did that name come from anyway? LOL Do you also call Shepherd's Pie "Chinese Pie"? I'm from Maine, btw.
 
hamburger, rice and corn mixed together.

brown and season your lean ground beef.

in a separate pot, cook your rice (Lipton's Chicken & Broccali flavor) add your rice (Green Giant's Mexican Style corn).

drain your ground beef and stir it into the same pot as the rice and corn.

Let it simmer for 10 minutes and voila!

It's really good with hot sauce on top.

I was suprised by that name for that dish. I thought it would be the casserole with chowmein noodles, soy sauce, and cr of mushroom soup that my midwestern grandma used to make.

I make a lighter version of ramen stir-fry once in a while as a quickie dinner (DH really likes it) but I lowered the sodium by omitting the seasoning packets completely. Instead, I use a couple of spoons full of Hoisin sauce for color/flavor, a dash of sesame oil, and low-salt soy.

I also use ground turkey/chicken instead of beef, use only about a half pound of meat, and load up on the veggies to bulk up the dish. It's still *not* healthy because I believe the ramen noodles are very high in fat, but it's fast to make and likely somewhat healthier than ordering Chinese takeout.
 
Brown beef in a soup pot. When beef is almost done, add a box of frozen chopped spinach (thaw it first and drain liquid). Add equal parts tomato soup and beef (or chicken) broth. Season broth (I use Italian seasonings, garlic salt, and pepper) and bring broth to a boil. Add a few hand fulls of cheese tortillini. Cook until pasta is done. This recipe also works well with ground sausage, too!

We had a recipe similiar to that for Chinese Chop Suey. It just was chicken, chowmein noodles, soy sauce and then you sprinkle the dried noodles on top.
