Does anyone want to share some of their favorite things to grill? We have a TT down the shore and go down every weekend, and I need some good recipes or ideas for new things to make on the grill. I'm going to try grilling pineapple next weekend.
 
I will grill most anything,

lots of trial and error at 1st but use common sense
 
For grilled pineapple I use a recipe from the Barbeque Bible by Steve Raichlin...it's a great book for all kinds of barbeque and grilling recipes. I've never done the flambeing so I can't vouch for that but even without it the pineapple is awesome!


Grilled Pineapple

1 ripe pineapple
1/2 cup melted unsalted butter
3/4 cup granulated sugar
1 teaspoon grated lime zest
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
Ice cream
1/2 cup dark rum or 151 proof rum, for flambeing (optional)


Preheat the grill to high. Oil the grate.
Cut the rind off the pineapple, leaving the green leaves intact. Cut the pineapple in half lengthwise through the leaves as well as the fruit to obtain 8 slender wedges of pineapple with leaves intact. Trim the core off each pineapple wedge. Have the melted butter in one shallow bowl; mix the sugar, lime zest, cinnamon and cloves in another bowl.
Dip each wedge of pineapple first in melted butter, then in the sugar mixture, shaking off the excess. Grill the pineapple wedges until browned and sizzling, 5 to 8 minutes per side. Transfer the pineapple wedges to plates or a platter. Serve with ice cream.
If using the rum, heat it in a small saucepan until warm, almost hot, but do not let boil. Touch a match to the rum and pour it over the pineapple. Serve at once.
 
We love to grill Salmon on our grill! Lot's of butter! Mmmmm! We use our grill ALL THE TIME during the summer.
 

We do Salmon too - brush with olive oil, sprinkle with salt, pepper and Emeril's Essence.

I love center cut pork chops - marinate in Honey Teriaki (sp?) marinade (I like Kens) for about 30 minutes. Then grill but make sure not to overcook them. Yummy!

These are some great ideas. Thanks aprincessmom for the pineapple recipe, I didn't have one and that sounds very easy. I'm definitely going to print that to use.
 
A favorite...grilled pizza.

My favorite is heavy cream instead of tomato sauce, carmelized onions, procuitto and goat cheese.

Grilled Pizza

Ingredients
2 loaves of frozen bread dough, thawed
olive oil
1 jar of pizza sauce or barbecue sauce

Seasonings Suggestions:
fresh chopped garlic, fresh basil and dry herbs

Topping Suggestions:
grilled vegetables, pineapple, shredded ham, or tomatoes

Cheese Suggestions:
shredded mozzarella, Provolone, Monterey Jack, Feta, or Parmesan

Directions
Divide each loaf of bread dough in to 4 balls. Roll dough on corn meal or floured surface and pat out the dough to 1/4 inch thickness to make small circles. Brush each circle with oil.

Place dough circles on a medium grill; grill uncovered until dough starts to bubble in spots on top and bottom is lightly browned. Turn and do the same with the other side. Remove rounds from grill.

Brush each crust with sauce and top with your favorite topping and herbs. Top with cheese and put back on the grill; cover and grill about 5 minutes until cheese melts, the bottom of the crust is crisp and the crust looks done.

Grilled Pizza

Prep. Time: 1:45
Serves: 6

1 1/2 cups warm water - divided
2 tsp. light brown sugar
2 packets dry yeast
3 1/2 cups unbleached white flour
1/4 cup whole wheat flour
1/4 cup cornmeal
4 Tbls. olive oil - divided
1 tsp. salt
pizza sauce - of your choice, as needed
shredded cheese - of your choice, as needed
toppings - of your choice, as needed

-Measure 1/2 cup warm water in a bowl; add sugar and yeast and stir to dissolve; allow to stand at least 5 minutes, or until froth forms on top.
-Meanwhile, sift together into a large bowl the white flour, wheat flour, corn meal and salt; make a depression in the middle and add 3 Tbls. of the olive oil and 1 cup warm water; add prepared yeast mixture; mix all ingredients with your hands and gather together and place on floured board.
-Knead dough about 10 minutes, adding more flour if dough is sticky, to form a smooth, elastic mass.
-Grease a large bowl with olive oil; place dough in bowl and turn to coat with oil.
-Cover and let rise in warm place, draft-free location until doubled in size, about 45 minutes.
-While dough is rising, prepare desired sauce and toppings.
-Divide dough into 6 equal pieces and, on a floured surface, roll out to desired shape, about 1/2" thick.
-Coat both sides of shaped crust with olive oil, then place on grill directly over fire until upper surface begins to bubble, about 2 minutes. Fire must be very hot and grill must be clean (coals should be red with a small flame, like a steak fire; this is important). Watch crust closely and rotate with spatula if necessary.
-Remove crust and turn cooked side up (it should be golden brown).
-Brush with olive oil and top with sauce, cheese, and desired toppings.
-Sprinkle some olive oil over each pizza.
-Return for final cooking, 2-4 minutes.

Notes: Keep in mind, the cooking time of these will be shorter than in an oven. Use toppings that take little time, if any at all to cook and do not overload. Try using a soft or crumbled cheese and a cooked, warm sauce

It's all good off the grill =) DH usually makes up his own marinades and such, just by chunking stuff together until it looks good =)
