DH wanted to try grilling shrimp this weekend even though he brought me shrimp that had been already cooked & shelled. I was very surprised at how good these turned out! The recipe I used is a keeper. :teeth:

Does anyone else have a favorite recipe for using on the gas grill to share?

Spicy Orange Grilled Shrimp

½ c lime juice
1 Tbl Tabasco sauce
2½ Tbl balsamic vinegar
1 Tbl black pepper
1/3 c orange marmalade
¼ c oil
2 cl garlic (really just slopped from spoon)
1 tsp Kosher salt
2 Tbl cilantro

I marinated them for about 4 hours & then put them on toothpicks in pairs. Yum!

[NOTE: The original recipe had called for cooking the marinade & pouring over the shrimp, then letting sit for 6 - 24 hours. I didn't both to cook the marinade & think that 6+ hours would be too long when using pre-cooked shrimp.]
 
We love shrimp on the grill we'll have to give that a try!

Here's our favorite:

Jalapeno-Lime Shrimp

Marinade:

1/3 C pickled jalapeno slices
1/4 C juice from the jar of jalapenos
Juice of 2 limes
1/4 C vegetable oil
4 scallions, sliced
3 garlic cloves, minced
1 pound large shrimp (24 to 30 shrimp)

Jalapeno-Lime Mop

Remaining Marinade
1/2 C seafood or chicken stock
Juice of 1 lime


1. Puree the marinade ingredients in a food processor or blender.

2. Peel the shrimp, leaving the tails on. Place the shrimp in a shallow, non-reactive dish or plastic bag, Pour the marinade over the shrimp and let the shrimp marinate at room temp. 30 – 40 minutes.

3. Drain the shrimp from the marinade, pouring the marinade into a saucepan. Add stock and additional lime juice to remaining marinade for the mop. Bring the liquid to a vigorous boil over high heat and boil for several minutes. Keep the mop warm over low heat.

4. Place the shrimp on a small grill rack and baste liberally with the mop. The shrimp should cook approx. 25 minutes.

Mmmm, that sounds good! I'm adding this to my list of "things to try."

I don't know if I mentioned it, but we used the excess marinade to dip the shrimp at the table. What was nice about it was that I didn't even need to boil it as the shrimp had been pre-cooked. ;)
