Grilled Vegetables ??

That can be served chilled? With a dip? Any recipes?
I was thinking Asparagus? What else is good cold?

I like eggplant, zucchini, yellow squash, marinated in olive oil, balsamic vinegar, and garlic, and homemade roasted peppers! Oh, and portabella mushrooms!

Here's a great one- just barely cook (grill) the asparagus-you don't want it mushy or limp. Then there's a wonderful cold dip- but I don't have the recipe. My sister is bringing it to me tonight so I'll post it then.
