Grilled Chicken with Raspberry Marinade

A friend of mine directed me to this recipe. I haven't tried it yet, but it certainly sounds yummy.

GRILLED CHICKEN WITH RASPBERRY MARINADE

2 whole chicken breasts, split in half
1 1/2 C. fresh frozen raspberries
1 C. raspberry vinegar
1/2 C. olive oil
2 bay leaves
1 T. dried thyme
salt and pepper to taste

Combine raspberries and vinegar in saucepan. Heat to boil. Remove from heat. Stir in oil, bay leaves and thyme. Cool to room temperature. Pour marinade over chicken and refrigerate overnight, turning occasionally. Grill over hot coals, basting occasionally with marinade.

I made this on SUnday!! The only diference is I put a little sugar ( actually I used Splenda) in it. It was SOOOOOOOO sour otherwise. I must have had really sour raspberries!! It was really good!!!! I filed the recipe away in my box for future use!!
 
YUM! That sounds really great! I am having company next weekend and I think I will give it a try!

I am on Weight Watchers and this sounds like a really good recipe for this. I am always looking for good recipes for chicken that I can eat on WW.
 
I made it too but changed it just a little I had fresh blackberried I picked so I made it with them. Yummy!
