I found a great way to use up extra tomatoes and basil from my garden. I bought some Lavash bread, brushed it with olive oil, and covered it with sliced tomatoes, fresh basil, slices of mozzarella, some low fat ricotta, salt, pepper, and crushed red pepper. Bake at about 450 for about 10 minutes
