Gratuity and Tax - Dining Plan

I am considering the dining plan for my trip in July, I have my spreadsheet going, Table Service Restaurants (Using allears for the menu) I have chosen basically what I thought everyone would eat, some places I have added a appetizer. So with the Regular Dining Plan when the bill comes it would have the following charges for me to pay - Apps (if ordered), taxes and gratiuty correct?

Wouldn't it only be taxes on the food that you were charged for?

You would only pay taxes on anything you order which is not included in the DDP ie apps. The DDP includes taxes for sit down meals, quick service and snack.
