grand gathering spring break?

I was just wondering how the crowds are the week after Easter. My whole family is trying to plan a trip and we thought the kids spring break would be better than the summer. We thought that it would not be as hot, I know it will be crowded but how crowded. We have been in mid-July before and it was so hot and crowded. My husband and I and our DD (2) will be going in December, but it is not possible for the whole family to go due to school. Please advise me on this time of year.....I do enjoy this board even though I am a new poster!!!!!
