Anyone have a list of the available snack items that can be made? Last time we went there were only one or two.

If you look in the Sticky thread about confirmed snacks for 2011, either on this forum, or the dining plan forum (which is where I think it is).
YOu may see an updated list.

But I will be honest, it changes constantly. Many times it depends on the CM working, the day...etc.
And the choices are very limited. When we were there in Feb of this year, the only thing you could get in the "make your own" was the cookie or 1 pretzel rod, then you could only have it dipped, no other add ons.

It is much better to use your credits for premade stuff.
