Asst. crackers, hard cheeses (ship a paring knife, can't cut cheese w/ plastic & bring asst. zip lock bags to store opened cheese etc.) We love baby carrots and dip, along with sliced salami or peperoni w/ cheese as a quick snack or appetizer before drinks. Breakfast Bars, Yogurts, Frozen breakfast sandwiches in small packaging like hot pockets, or you can put them in zip locks to save room. Lunch meats, nuts, chips, dips, pringles, tortilla chips and salsa, I travel with 14 year old boys so snacking is high up on the list! My kids love olives and they come in pull top cans now, as well as glass jars. The fridge is small but it will accomodate quite a bit! Also, if you like a pre dinner cocktail, ship a bottle of your favorite mixer and alcohol!
I do mostly 2br's now but in the early days it was studios so I brought a small soft sided cooler with me and stored drinks in it with ice from the resort to make room in the fridge for other things!
For dinners I'd buy a rotiserrie chicken from Winn Dixie and add a salad and microwave rice, vegies and/or potatoes. Hot dogs are quick in the microwave, save packets of mustard and ketchup, easy to carry rather than bottles.
