good dining spots for solo diner?

my mom may now be joining dbf and i during december. she doesn't want to go to the parks, so she can't meet us for a bunch of our ADRs.

where do you recommend for her? it would be good if they could be near some non-park activities so that she can make one trip and do a bunch of things. we will be on the DDP. i think she would prefer "quieter" places if possible.

here is what i was thinking (based on ressies that are available):

arrival night - ohana dinner with me and dbf
day 2 - chef mickey's brunch with me and dbf, CS dinner at AKL/V to relax at resort
day 3 - CS lunch, boma dinner to relax at the resort
day 4 - CS, cape may cafe dinner to explore the boardwalk
day 5 - somewhere in DTD, though not loving the choices for my mom. maybe sanaa at the resort (OOP) and then WPE for dinner? if a TS in DTD, either wolfgang puck cafe or portobello (OOP) and then WPE for dinner
day 6 - CS lunch, jiko dinner (OOP?)
departure day - CS lunch, rainforest cafe early dinner with dbf and i

the credits are off. i just don't see why she should use 2 TS credits for a signature dinner when it makes more sense to pay OOP. same with sanaa.

thoughts? what are good solo-mom places? she likes seafood and steak and will try new foods.
 
Def have her do lunch or dinner at the Grand Floridian Cafe.

She can see the Gingerbread House, maybe buy some treats and also enjoy the tree in the lobby etc

Maybe Whispering Canyon cafe so she could also see the tree and enjoy the lobby
 
If she does Whispering Canyon (Or Artist Pointe for that matter) she could also take the bus to the campground and ride around to look at the campsite decor. Some of those RVs are awesome!
 
i actually think she would love the artist pointe salmon! great suggestion.

new plans: chef mickey's and ohana with us, artist point, boma, cape may cafe, sanaa (OOP), and maybe WPC (OOP)
 

For her DTD day, look at the menu for Turf Club; it's the TS at SSR. It is very close to DTD but has a nice, relaxed, more 'adult' vibe than many resort restaurants.
