We like to eat counter service for lunch at the parks then do a sit down dinner - any recommendations?

Depends which park.

I can help with Universal Studios better than IOA:

Louie's Italian Restaurant. It's counter service, and has pizza, pasta, salads, and such. Please note, this is pizza different from what is sold from Monster's Cafe, or any other counter service that sells pizza. I only like the pizza at Louie's...tastes better IMO. I eat here every trip for lunch (that's almost every week)

Cafe la Bamba. My parents like this place. Has chicken, BBQ Pork sandwich, BBQ Chicken Wrap, fries, etc. My mom loves the cornbread (I think it is) a whole lot. We eat here every once in a while.

Those are my top two, IMHO! :)

I guess since we're going in August, I should be asking for good counter service that is AIR CONDITIONED!!

At IOA go to Burger Digs in the JPRA section of the park.
It works out perfect because they open at 11am and you'll be hungry when you see it. Get to IOA when they open, take your lap going clockwise (Hulk, Spiderman, Dr. Doom, Rip Saw Falls, PF, JPRA), then see if they are open. If not walk past and do Flying Unicorn or Deuling Dragons and come back.
They sell burgers and frings (fries+onion rings) with a full condiment bar on the side.
It's indoors, and downstairs is a play area for the kids with dinosaurs to look at.
There's a pizza joint nearby, but they're outdoors with fans.

Just wanted to second the vote for Louie's at US. We just returned today from a 5 day visit, and I the only counter service meal we really enjoyed was at Louie's. The others were all just so-so. We did have a little mishap as we ordered a whole pizza (only $13!), and they said they'd bring it right out as they didn't have any available right then. Fifteen minutes later when we didn't have it yet, I went back to the cashier.....she consulted with the manager who brought us our pizza, apologized profusely, and gave us all free deserts too! Didn't seem like that big of a deal to me......sure was nice of them! Pizza was great! Louie's is the one place I'll be sure to go again.

Our favorite was Capt. Quints in the Amityville section of UO.

$13 for a whole pizza at a themepark?! Geez, that's really cheap!

Good Counter Service places are:
1.Burger Digs
2.Enchanted Oak Terrace in the Lost Continent(good turkey legs)
3.There is a counter service stand near Amity that has really good fish 'n chips. You eat at picnic tables next to the lagoon. It is a nice spot and the food is good. I think they may also have hotdogs. I'm sorry I don't remember the name of the place.
4.The International Food Festival (or something like that) is located near ET. They have a variety of food. The Chinese was good.
5.Richters is good for burgers. It is located near Earthquake. If you choose Richter's be sure to get there before Noon.
6.The burger place upstairs at Discovery Center in Jurassic Park is pretty good.
7.Green Eggs and Ham is good(IOA)
8.Circus McGurkus (IOA)
9.Louie's over in New York at Universal Studios. They have pasta and pizza and salads
10.Thunder Falls in IOA
11.Cafe La Bamba at USF
