You are going to love staying at the BWV!!! It is a fantastic resort to be at and it is in a super convenient location. Since you are only going to be there for 1 night, I would go to a park but definitly either Epcot or MGM because this will give you SUPER easy access back to the boardwalk after either Illuminations or Fantasmic. I would either plan a nice dinner at one of the WS restaurants or one of the MGM restaurants then stay for the night show and either walk back or take the boat back from which ever park you are at. Don't eat dessert with dinner but instead have ice cream, candy treats etc on the boardwalk while you sit on a bench overlooking the water all lit up and watch the boardwalk entertainment that is taking place that night which can be anything from a magician to a rolling piano player! Or you can go to Epcot or MGM see the nighttime shows and then have a late dinner at one of the Epcot resort restaurants and then enjoy the boardwalk entertainment. There are several excellent restaurants among the Epcot resort restaurants. I can't even describe how enchanting the Epcot resort area is at night all lit up with its various areas and atmospheres and Epcot in the background--it is Disney vacation magic to it's fullest.
