Gluten free recipes

I am looking for some help.
My friend just found out she has Celiac disease, or allergy to wheat products.
We are having a surprise baby shower for her in a few days, and I want to make a nice dessert that she can eat.

I have a fudge recipe and in it is:
White Marshmallows
Chocolate chips
Evaporated milk
Margarine, Vanilla, salt, white sugar

Another recipe I might use has:
coconut
Oatmeal
cocoa
sugar
margarine
milk
vanilla, salt

Another:
colored marshmallows
peanut butter
butterscotch chips
margarine.

Do any of these ingredients have wheat in them?

Those should be ok - although some celiac's steer completely clear from oats - my husband has been gluten free for almost thirty years and he is ok with oats. Also some strict followers only use vanilla that is marked gluten free.

As the other poster said though, you might want to stay away from oats and be careful with vanilla. The alcohol that is in some vanillas come from a gluten containing product. (Some are marked as being from potato alcohol which should be fine for your friend (but these are few and far between).

Here’s a special desert I had when I had to be gluten free. I still eat them sometimes now even though I can have wheat again. They are :lovestruc

Rice muffins (aka the best cupcakes ever!)
(they only make 6)
1 egg
½ cup liquid
2T oil
1 cup Bob’s red mill rice flour (although other brands might work)
2t baking powder (use gluten free type)
½ t salt
½ cup sugar
Optional 2T- 1/4cup (whatever flavoring/extras you want: chocolate chips, blueberries, nuts etc)

Bake at 425 for 17-20 minutes

(these taste good without frosting or you can add some)

See, I would have never thought of Vanilla. But thought I better put all the ingredients down just in case!

Hi,

Definitely do not use recipes that include oatmeal or butterscotch chips. Oatmeal can work for some celiacs, but you need to buy special gluten-free oatmeal, not Quakers. Also, most butterscotch chips have gluten in them, I think it is barley, so that's not safe either. Before you make anything special for your friend, I would run the recipe by her. If you don't do that, save all the containers, bags, etc from the ingredients that you use so she can check them before she eats it.

I have celiac and truly appreciate the extra effort friends make for me, but I also want to be safe and healthy, so I like being able to check or make suggestions in advance.

fyi my grocery stores have Betty Crocker mixes that clearly state "gluten free" on them. My BFF has celiac's too so I made the brownies for her bach. party, OMG they were better then "regular" brownies....LOL

yes, thankfully, I can eat wheat again. My celiac disease turned out to not really be celiac disease. It was an allergy or intolerance to gluten (I'm not sure which) caused by some other (hidden) medical issues that when corrected/treated, eliminated some of my allergies and intolerances.

OP- You said chocolate, have you thought of something like this?

...how about a nice fruit platter?? Also, Kozy Shack Rice, Tapioca, and Chocolate puddings are GF....

...sometimes, it's not always the indredients in an item, but where it is manufactured. There could be cross-contamination....

Yup, the GF brownies were gone well before the regular ones were. LOL

I don't think so. Ethyl alcohol is grain alcohol so unless it says it comes from corn, it probably comes from wheat or barely. However, I could be wrong. Does the packaging say gf?

Some brands that are GF are Mccormik(sp) (both pure and imitation) and neilsen massey (sp). You can also check out the walmart and albertson's brands. If they are GF, (and they should be) they'll say so on the packaging.

remember that gluten free doesnt necessily mean wheat free... check wheat free.org.. for recipes.. or go to the library to get "my child is allergic to everything" cookbook..
 
I took the fudge.
She ate it and loved it and wanted the recipe and said it was okay for her.
She doesn't have problems with Vanilla. Just wheat.
Her mom was also there, and has the same thing as her, and said she is fine with vanilla.
It was yummy and I am glad she could enjoy it!
