I went to WDW in March with my friend who has Celiac's disease - he loves WDW now!
All the chefs at the table restaurants were OUTSTANDING!
Even the managers at the quick service places were great!
His favorites:
mickey waffles at Kona Cafe
specially made pasta at spoodles
Boma - everything about it! the chef's assistant is married to a man with both a dairy intolerance and celiac's (like my friend) - she made him a special seafood soup from scratch and brought him tons of special things - including his first taste of tofutti! I couldn't believe he hadn't heard of it yet!
Disney did not disappoint.
One of the links on the DISabilities boards has the contact information for the special diet department at Disney - they were very helpful.
even when I made our ADRs, the cast member who answered the phone knew what celiac's disease was!
Be forewarned - Universal is not as accomadating.
we had one guy at a counter service place say "Everything has gluten. he can have a salad. that's it."
