As someone who is gluten intolerant, I'd encourage you to have HER do the legwork on this one. Some people have pretty severe issues (for which I wouldn't want to take responsibility unless it were my own child) - and find that trace amounts of gluten from a factory simply processes wheat products will set them off with severe symptoms. Me, I can handle soy sauce or soups that have a little flour in them.
When you make reservations at any restaurant, mention that a member of your party is Gluten Free. Sometimes the chef will come out and talk to you. Sometimes Disney will have you call the restaurant in advance. Sometimes the waiter looks at you like you've grown two heads and then you just need to be sensible about what you order. (If you are going offsite, Outback Steakhouse has a GF menu).
When I travel, I always bring my own GF energy bars (I like Clif Bars) so I don't starve when we end up at a place that does pasta and breaded food. Most grocery stores will carry some GF stuff, but I avoid most of the "fake breads, pasta and baked goods" myself and just sub in whole foods that aren't wheat - rice and other GF grains, fruits and vegetables, meats. The other problem is that GF brands will vary a lot by store, some stores carry some good brands and some stores carry others (and some stores carry lousy ones - and what is lousy varies by the individual eating it), when I do GF shopping at home and am doing GF processed foods, I have to stop three places to get what I want - and often over several weeks as products move on and off the shelves.
