Just returned from a great week at WDW where I had a fantastic experience with respect to gluten-free dining. Every restaurant we ate at had a solid allergy protocol, all understood cross-contamination and all were able to provide me a safe and delicious meal. Sharing what I ate below. My only disappointment is that few restaurants offered gluten-free beer, and if they did it was the worst one out there.

Landscape of Flavors at AoA - the allergy chef was fantastic, so helpful, thorough and kind. We stayed at AoA and I ate there every day for at least one meal and didn't feel I was missing out on anything.
Raglan Road - salmon entree was delicious.
Brown Derby - club salad was great
Crystal Palace - lots of gluten-free options and the chef came out and walked me through my options. They also have a brochure that lists the gluten-free items.
Casey's Corner - had the best Chicago style hotdog on an Udi's bun.
Polite Pig in Disney Springs - many gluten-free choices and the best meal we had all week.
Yak & Yeti - only a few gluten-free options, but I enjoyed my vegetable stir-fry.
La Crêperie de Paris (EPCOT) - the savory galettes are naturally gluten-free with the exception of one and they can make the sweet crepes gluten-free by using the galette batter. This was such an unexpected delight and our favorite breakfast of the whole week.
