If I were you I would call Coral Reef and ask. We were at Disney last week, 1st time traveling there since our son was diagnosed with Celiac Disease. The first evening there I called Tuskar House because we had breakfast reservations. I was told to just let them know when we arrived and they would arrange to have the chef come out and walk us through the buffet. This was the case at every sit down meal we went to and counter service restraurants were just as accommadating. When they called a chef out to speak to us he was there within minutes, they had notebooks by the registers listing ingredients of all the items on the menu. We were even happy to learn that they had gluten free pizza at Pizza Planet. I've heard that bakeries on Main Street and over by The Boardwalk have gluten free baked goods as well.
