Does anyone know if the tickets I pick up have to be used the same day, or can I pick them up during our trip and use them at a later date?

From the FAQ section of the promotion information on the web site:

Is there an expiration date for my free theme park ticket?

Yes. December 15, 2010 is the last day that you may redeem your voucher for your free ticket. Once your voucher is redeemed for for the 1-day, 1- theme park ticket , your ticket will be valid for use only on that day of redemption.
