Here are more tips from a recent Dallas Morning News story about cake balls:

• The smaller the cake balls, the easier they are to eat.

• Use a melon baller to keep the size uniform.

• Refrigerate the mixture of cake and frosting at least two hours before shaping; after shaping the balls, freeze them at least six hours before you dip them. In this state, undipped, the cake balls can be kept frozen for weeks.

• Make sure the balls are not frozen solid when you dip them, as the coating may crack when it starts to dry.

• Guittard white-chocolate disks work well for the coating.

• Almond bark coating is another option. A 20-ounce package of almond bark vanilla or chocolate coating can be melted in a double boiler (stirring constantly) or in the microwave in a tall, narrow container, for 45 seconds on high, stirring at 15-second intervals. When it's melted, add 1 teaspoon vegetable oil. To tint it, add oil-based coloring drop by drop, stirring until it is the desired color.

• If using an oil-based color to tint the coating, be prepared to work quickly to decorate the balls with sparkling sugar, jimmies, chopped nuts, etc. The oil candy color makes the coating set rapidly. It may be easier to work with a pal.

• Work in small batches, and keep the rest of the balls in the freezer.

• Toothpicks, a fork or a skewer can be used to dip the balls. A candy-dipping fork (from a craft or bakery store) may help ensure an even coating.

• Put the hole side down when placing the ball on wax paper to harden.

• Dipped balls can be kept at room temperature for days. If refrigerated, the candy coating will sweat. (And you don't want sweaty balls)

For example:
Vanilla cake and crunchy chocolate toffee pieces are combined with butter cream icing, then dipped double-chocolate coating. This toffee treat will melt in your mouth.

OR

Coconut puree is blended with vanilla cake, pineapple juice and dark rum. This super moist cake is then dipped in white chocolate and capped off with a sliver of coconut.

It's really good. I only tried it for the first time a few months ago and now I love it. It tastes like a chocolate cake for the most part, but moister and the color is so pretty.

I found another recipe, and I printed this one out as well. It's a little more detailed and also gives exact directions on how to melt the bark or wafers. I need exact information when I bake. lol

And now I really want to get a two-tine candy dipping fork to make the dipping easier. I can tell this is going to be fun experimenting, but soooooo bad for my waistline. :rotfl2:

BASIC CAKE BALLS

1 (18.25-ounce) boxed cake mix plus ingredients called for on box

1 (16-ounce) can prepared frosting

Almond Bark Coating or Confectionery Wafer Coating (both recipes follow)

Bake the cake according to package instructions. While warm, crumble the cake into a bowl with a hand mixer to a fine texture. Mix in frosting to make a paste, using 3/4 to a full can of frosting, according to taste. Chill the mixture for at least 2 hours.

Using a melon baller or your hands, form the mixture into 1 ½ -inch balls. Place the balls on wax paper; freeze at least 6 hours.

Working in small batches, remove the balls from the freezer and dip the balls into warm, melted Almond Bark Coating or Confectionery Wafer Coating, using toothpicks or forks to manipulate the balls. Remove the balls. Place the balls on wax paper to harden.

Makes about 30 cake balls.

Almond Bark Coating: In a double boiler, melt one (20-ounce) package vanilla- or chocolate-flavored almond bark, stirring constantly. Or, in a tall, narrow container, microwave almond bark for 45 seconds on High (100 percent power). Continue to heat in 15-second intervals, stirring between intervals, until melted; be careful not to scorch.

When almond bark is melted, stir in 1 teaspoon vegetable oil. If desired, stir in oil-based coloring drop by drop until you achieve the desired color. See "Where to find supplies" for purchase information.

Confectionery Wafer Coating: Melt 48 ounces confectionery wafers in double boiler or microwave oven per instructions for Almond Bark Coating. Omit oil. If desired, stir in oil-based coloring drop by drop until you achieve the desired color.
