Does anyone know when the gingerbread houses go up in the resorts? TIA.

There's no set date. The resorts get decorated in a different order each year. Some are getting their decorations now.

This. They will all be up by the Saturday of Thanksgiving weekend though.

We stayed at the GF last year over Thanksgiving and arrived the Tuesday before Thanksgiving and the gingerbread house was up and running.
