the SO and I have a combination of Disney and visa gift cards to use for the trip. Am I allowed to load them on my Disney app and use it for max pass and a rental car ya think or it needs to be an actual debit/CC?

You might be able to use the visa gift cards on the Disney app

I bet the car rental would let you use that for payments if you also put a regular card on the reservation.

At disneygiftcard.com you can combine then Disney gift cards to one.
