Hi can Disney gift cards be used to purchase food everywhere in the park sit down or cafeteria style or only certain locations. And at springs?

And does Disney offer any AAA or AARP discounts at any food spots

And can I use gift cards to purchase admission tickets online before I'm there or does it have to be at ticket window only

No.

Disney gift cards are accepted anywhere in the parks that accept credit card payments which is just about all of them.

I think they finally finished upgrading and everyone takes cards now including the roaming carts that sell flashing things. If they don't, they'll tell you where to go and what to do in order to buy it nearby and bring the receipt back to get it (balloons come to mind but I think they actually carry a scanner now)

Gift cards are very convenient and easy to use at WDW. And, yes, other than the mobile vendors, just about everywhere will take cards (and a lot of the mobile ones will now too).

I think all the mobile vendors take them now.. that's a more recent fall change but I could be wrong and haven't walked up to every single one to see if they did.

I think that's a requirement to operate on disney property so I want to say a blanket yes but to be honest, I'm not sure. Also certain types of cards like the barcoded food and wine ones are suppose to work eveywhere but some places refuse to take them (joffrey's is the one I had issues with it). I'm not sure about swan and dolphin though as I've only been there once and never tried to use one.

You can get an AARP discount at Rainforest Cafe and AAA discounts at a few restaurants at Swan/ Dolphin.

I do believe they all do take the gift cards. I have never had an issue using on in Disney Springs, and most of those places are not Disney owned Earl of Sandwich is an example I know for sure). I'd think if they can take payment through a Magic Band (room charge) they gift cards should work too.
