gift card questions

I decided to for go the dining plan on our first trip.( its not free when we go) I would rather dine where I want where I am, if that means counter service. I just do not know the parks and want to go with out all the hassles and price of doing the plan when I am as happy with counter service. I will make a few reservations for the crystal palace etc . Any ways, I am going to be buying Disney gift cards, can these be used at the restaurants for meals any where in the parks?
and how about candy stores and merchandise? thanks.
