GF Pancakes

Hi

Does anyone know a good resturant thatb would cater for me with a gluten, wheat and diary free diet by specially making me suitable pancakes. I have heard Disney doing this but this year we are going to Universal.

my son follows a gluten free diet and my daughter is lactose intolerant and we had no problems with meals at disney, we did eat at hard rock in universal village and they was also good at helping out.
Not sure about pancakes though.
