I am wanting to try these on our next trip, so can't comment on taste, but I would imagine its kept in the fridge since GF bread preserves better/longer when in a fridge or freezer. If kept at room temp like wheat based bread, it will mold more quickly than your average bread based product. I would eat it the day you purchase it.
