Medium does work at Geyser Point but PP is right, Med Rare is ideal for Bison due to the low fat content. Maybe the meat used at Disney is a blend of some sort? I honestly don't know.

True. A good point that ordering bison med-rare at most is advisable.

I suspected that GP's ground bison had added fat. Or, who knows, might've been that particular time was pixie dusted. Next time, it might be terribly dry.
