I will be staying at CBR and wondering if I pick a dinner choice at Contemporary or Polynesian would I have to take bus to Disney and then hop on the monorail to these resorts?
monorail or simply walk to the Contemporary. It's a short, pleasant walk. You would have to take the monorail for the Poly.
It's also a good thing to remember if you're going from a park to the MK. Disney will recommend taking a bus to the T&TC. I think it's easier to take the bus to the Contemporary and walk.
There are no direct Disney buses that travel resort to resort.
To get from the CBR to a different resort for dinner, you would take a CBR resort bus to the nearest open Park and then take a bus from that park to the resort you are trying to get to.
You can also use DTD as a transportation "hub" and switch there to the new resort bus. This is usually a longer process and less desirable.
As others have mentioned if you go to the MK from CBR you can walk or take the monorail to the CR or take the monorail or a boat to the Poly.
We ususally budget for a few cab rides for our hotel to hotel dinner trips. It is much easier and most cab fares are under $20. It is still way less than paying for a rental car.
Have a Great trip.

We are staying at CBR. The night we plan to go to Ohana at the Poly we will be at MK so ... We also have Chef Mikeys for a late breakfast, 1100. So we'll go to MK at rope drop and the nyou can walk over to the Contemporary from MK. Simple.
