Get most out of park and eat at Coral Reef?

Our teenager daughters will have longer passes, but my husband and I will only have a 3-day park hopper ticket. We definitely want to fit in a dinner at Coral Reef at Epcot. When is the best time to eat there without cutting too much in to our park/ride time?

Do it on an epcot day. Or do MK in the AM and go to epcot a few hours before resies?

Also, if future world closes at 7:00 does restaurant stay open later?

I would consider doing lunch there on an all Epcot day. It's on the far side removed from World Showcase, and a pain to trek to once you're on that side of the park. If you do lunch, you can do the major Future World attractions, eat lunch, THEN head to World Showcase and spend the rest of the day.
 
If you're willing to miss Illuminations, I would try for an 8:45 or so dinner reservation.
 

go to dinner late! do future world in the morning at rope drop (EMH would be ideal!)... do world showcase when it opens at 11... make the latest ADR for CR you can, and head there on your way "home" :)
 
I agree with PP. Make your ADR for late. The restaurants do stay open later than the attractions. You will be all don with the attractions and can relax and enjoy what is going on around you.

If you have an AK (or other park) day that closes at 7, make your ADR for after 8 at CR and you haven't wasted anything.
