I have a very low risk tollerance. I never book an ADR that includes a cancellation fee for my first day. If there's a weather delay somewhere around the country or an equipment delay or even big accident on the highway and DME can't get by then you're just taking a chance of having to hand over your money in no-show fees despite the reason being beyond your control.
If your plane is on time then yes this is enough time. If the plane lands at 1:45 then you should be at your resort by 3:15 at the absolute latest. If your room happens to be ready then assume you'll want to drop off your stuff so figure a half hour at your resort which brings you to 3:45. You're staying at a resort that requires bus transportation then they say allow up to 90 minutes to get to your ADRs so that means you should be at the restaurant by 5:15. So again, if you have no travel delays then it's do-able. IMO it's stressful but it is very doable. If you have a flight delay though, there's not a lot of wiggle room. You could always save time by taking a cab from your resort to BC and walking from BC to EP so you'd only need a half hour (it takes time to walk through EP to get to GG) so if you're running a bit late then you can save time that way.
