I don't believe that that is correct. DH is godfather to his niece and is Jewish. The priest knew DH was jewish and approved it.
When my nephew was baptised in the Catholic Church 9 years ago, my brother and sister-in-law asked me to be Godmother. The Godfather was my brother's best friend, he is a practicing Catholic, fullfilling the 1 Catholic rule. I'm Lutheran, they wanted a note from my pastor confirming I was an active member of the church. Even though I had been baptised and confirmed in the Lutheran Church, I was not currently attending so the pastor would not give me a note (which is understandable). So the Catholic Church where he was being baptised would not allow me to be Godmother since I was not a current member of a Christian Church. It was a large ceremony with about 10 babies being baptised (coincidentally all boys), the priest made sure he collected the notes from the Godparents churches before the ceremony began.
My sister-in-law had 3 brothers and I have 2 brothers, so there weren't any other women in the immediate family they could ask. The Godfather was not married. They ended up asking my sister-in-law's brother's wife, who was a current member of another Lutheran church. The ironic part is her brother and sister-in-law ended up divorcing, so I'm not sure if my nephew even has contact with his Godmother now (my brother and sister-in-law also divorced).
