I am in charge of our faculty Christmas party next Fri. night so I have tons to do this week. I'm making 2 main dishes so I would like to do some cooking this weekend so I don't have to do it all at the last minute. I am making chicken enchiladas and am thinking of cooking the chicken, rolling the enchiladas (the time consuming part) and freezing them in the enchilada sauce. I want to thaw them and then add the sour cream/cheese mixture on top and then heat. Do you think this will work? I know the chicken will be fine but I don't want to mess up the tortillas if they don't freeze well. Anyone have any ideas or suggestions?
