Freezing cookie dough

Since my work schedule is crazy(I work 3rd shift)

I want to make my holiday baking a little easier this year.

I know that I can freeze cookie dough.

I've done chocolate chip before.

But I'm sure there are varieties that shouldn't be frozen.

Can anyone tell me what kinds of dough do well with being frozen?

And how long does it take to thaw?

I freeze all kinds of cookie dough. I even use my scoop to portion and then I freeze on a sheet, then pkg. in airtight containers. We are a family of two now, our three boys are away at school, I bake a few at a time.
I have frozen, sugar, peanut butter, oatmeal and choc chip. Any dough with a butter base should be fine. I have even frozen the base for alot of my bar cookies to be used later. Just make sure that you wrap everything really well. They tend to absorb odors from your freezer.

What about defrosting them? I figure the peanut butter and choco chip can be baked frozen. But if we want to use cookie cutters for the sugar ones, I would have to defrost it first.

Or you could roll them out and cut them before you freeze them.

The only cookies I haven't had good luck with freezing are shortbread. They get too dry, probably because they have fewer wet ingredients.

I wouldn't chance freezing a batch of dough that needs to be rolled out either. You have to deal with both moisture levels and dough temperatures in rolling out dough. It can be challenging enough without adding what freezing might do to the dough.

That just seems more time consuming to me. I don't think it would work in my situation. Thanks anyway

You could freeze undecorated, baked cookies and just slop on the frosting and sprinkles as needed.
