Free Disney Dining Plan question

I understand about room rates being limited to a specific date, preventing the CMs from booking discounted rates beyond a specific day, but wouldn't the dining plan be considered a one time add on? If that's the case as long as you've checked in by the last date of the promotion it should encompass the entire trip.
