We know its any disney restaurant on site but I was just thinking cause we never been during this time is it all your meals? like breakfast, lunch dinner? how bout snacks? We were looking at one of the meal deals for the 1 counter and sit down. BUt if this falls into our OCt trip in 2011 then this is what we will do. i know its just put right onto ur pass/room key. just wondering how it all works and if it included all ur meals

First off, the dining plan is not accepted at ALL restaurants onsite.

If you are looking for basic information about the dining plans, how many meals they entitle you to, and how they work, see this thread:
http://www.disboards.com/showthread.php?t=2353648

This is for the 2010 dining plan, but it will work the same way in 2011.

Free dining works exactly the same way as it would work if you had paid for your dining plan.

Free dining works exactly the same way as it does if you pay for the dining plan, there's no difference, so the FAQ linked above does apply to your free dining trip. If you want to know if free dining is offered during your trip, we don't know for October 2011 yet. However, the dining plan you get free is going to depend on what type of resort you book, so if you are planning on a value resort, look at the quick service plan; if a moderate or deluxe, check on the regular dining plan. You could also pay to have your free plan upgraded.

Your questions are a bit confused. I'll try to answer them as I best understand them.

Each of the Disney dining plans offers a specific number of entitlements per person, per night. Those entitlements can be used for any meal (or snack, as appropriate) at a participating location. It does not mean that you simply eat anything and everything you want for free -- you have a fixed set of allowances based on your entitlements.

There are three different dining plans, each offering a different set of entitlements. The only one that offers three meals per guest per night is the Deluxe Dining Plan (DxDP), the others offer two meals per guest per night.

The meal and snack credits are put onto your room keys, so you can "pay" with them. All credits for the room are accessible from any key. The credits are awarded in a lump sum when you check in, so you can use them any time, and in any order, you like until midnight following your check out day.

For full details, check out the link that Nala provided above.

we are loooking at staying at pop.. what would b the xtra charge if we wanted the regular plan during free dinning instead of the quick plan? we would like the sit down and counter during free dinning.
