We need to change reservations our dates in order to get the FD package should I call now to get the dates I want at POP even though I won't be able to get the FD until May 7th.

It doesn't make a difference. Having the room booked in advance at full price doesn't mean it will be available with a discount.

I'd personally just wait and do it all at once.
