Free Dining - a couple of questions

I've never used the dining plan. But with my mom visiting in November and free dining being available during that time, I'm quite tempted to book it for a three night stay. I have a seasonal ticket and don't need the two-day ticket I'd be required to purchase. Am I correct in assuming that I can use that ticket at a later time, possibly towards the purchase of another seasonal pass? Does it expire at all?

I also want to be sure my calculation is correct that in order to see whether free dining is "worth it," I have to compare the discount for the hotel room (assuming they're offering one for November) and the cost for my ticket with the cost of food?

I am not sure about your ticket question, but I have been in the same boat with the whole "is free dining worth it, or not?" issue. I was poking around on here and I came across Cafeen's Dining Plan Spreadsheet.

It's a bit overwhelming, but just read the directions and fill it out to the best of your ability. I used the menus and prices that I found on the allears website. It was really helpful for me.
 
And yes you can use your ticket in the future either as is, or upgrade it towards some longer ticket or AP.
 
You can keep the ticket indefinitely. It will not expire until it is actually used. And yes, you can use it toward the purchase of an annual pass.

The other thing you might want to check out is the length of stay. My sister could not get it because they were only going to be there 4 nights and 5 days. I pulled this off the Disney World site:
Get a FREE dining plan when you purchase a non-discounted 6-night/7-day Magic ... hotels, for arrivals most nights September 30 through December 13, 2012.

I don't know what the issue was in your sister's case, but you only need a 3 night stay for free dining. You do have to pay full price for your room and buy a 2 day ticket for everyone as a Disney package. I'm guessing her issue was related to one of the other items. Or her arrival date was not included in the offer.

What you quoted is just Disney's example package to show pricing for advertising.
